A Truly Irish Pizza

Fran Carroll of Bistro Bianconi in Ranelagh (Dublin) has created not one but two uniquely Irish pizzas to compete in this year’s World Pizza Championships in Las Vegas in March.

Fran’s first creation is a basic pizza margherita with a whiskey twist. He uses a Jameson dough base, a secret sauce and another secret combination of cheese.

Bistro Bianconi’s second bid to win the World competition this year is a bit more elaborate. The ingredients include Jameson Whiskey, Clonakilty black pudding, Cashel blue cheese, bacon and apple. According to the Irish Herald, the recipe was created by Fran out of trial an error and has a mild aftertaste of whiskey. Fran also noted that the great thing about pizza is that anything goes and that seems particularly true for his creations!

It turns out Fran knows a thing or two about winning pizza competitions. His Guinness and Oyster pizza won was named Ireland’s Best Pizza in the competition last year. Good luck to Bistro Bianconi next month at the World competition!
